Best Keto Vanilla Cake

I’ve been trying to find the best keto vanilla cake recipe for YEARS and recently a keto client shared a recipe that takes the literal cake. I recently made this for a 44th birthday and it was even a hit with the non-keto eaters 😁

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted and slightly cooled)
  • 3/4 cup granulated keto sweetener
  • 4 large eggs, room temperature
  • 1/3 cup plain Greek yogurt or sour cream
  • 2 tsp vanilla extract
  • 2-4 tbsp unsweetened almond milk (if the batter needs thinning, more if necessary)

Method:

  • 1) Pre-heat oven to 325 degrees F
  • 2) Grease an 8-inch round cake pan and line the bottom with parchment paper
  • 3) In medium bowl combine almond flour, coconut flour, baking powder, and salt, sift or stir well
  • 4) In a separate large bowl beat together melted butter, sweetener, eggs, sour cream, and vanilla
  • 5) Pour the dry ingredients into the wet and stir until the batter comes together, it should be thick but still able to pour slowly (if it feels too thick, add almond milk 1 tbsp at a time- I find 1/4 cup or 4 tbsp is perfect)
  • Bake for 35-45 minutes or until the top is golden brown and a toothpick comes out clean (if the top begins to get too brown cover with foil for remainder of cooking time)

I like to double the recipe to make a layered cake and although the world is your oyster when it comes to icing and toppings, my favorite is a classic cream cheese frosting recipe and fresh berries to brighten it up (lemon zest and shredded coconut would be great additions as well!)

*Allow cake to cool completely before removing from pans, I recommend allowing it to firm up in the fridge or freezer before icing and ensuring icing is at room temperature to avoid crumbs!

For the Cream Cheese Frosting:

You need:

  • 4 oz (half block) softened cream cheese
  • 2 tbsp butter (softened)
  • 1/2 cup powdered keto sweetener (I use Swerve)
  • 1 tsp vanilla
  • 1 tbsp heavy cream (add more depending on what texutre you prefer)
  • Optional but recommended: I love adding a bit of lemon to brighten it up and cut the richness!

To make:

  • In a large bowl, beat together cream cheese and butter for 2-3 minutes, until light and fluffy
  • Mix in vanilla and sweetener
  • Add cream and adjust to texture of your preference

*If you are doing a 2 layer cake I recommend doubling this frosting recipe*
