Ingredients
- 2¼ cups almond flour
- 3 scoops Equip Prime Protein (Banana flavour)
- 5 large eggs, room temperature
- ¼ cup creamy peanut butter
- 1 cup mashed banana (approximately 250 g or 2 small bananas)
- ⅓ cup granulated keto sweetener (monk fruit or erythritol)
- 2 teaspoons baking powder
- 1 tablespoon ground cinnamon
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- ⅓ cup sugar-free chocolate chips (or chopped dark chocolate)
Pro Tip: Don’t have ripe bananas? Peel a yellow banana and microwave it for about 45 seconds to soften and sweeten it, giving a similar texture and flavour to a ripe banana.
Instructions
- Preheat your oven to 350°F (180°C). Line or lightly grease a standard loaf pan.
- In a large bowl, beat the eggs for about 2 minutes, until light and fluffy.
- Add the mashed banana, peanut butter, and vanilla extract. Whisk until smooth.
- In a separate bowl, combine the almond flour, Equip Prime Protein, keto sweetener, baking powder, cinnamon, and salt.
- Gently fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
- Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for approximately 50 minutes, tenting loosely with foil if the top begins browning too quickly.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
