File this under quick and easy no bake keto desserts to make in a pinch!
I was craving something sweet using what I had on hand after the holidays and keto haystacks were the perfect inspiration to these low-carb, high-fat, rich, fudgey and delicious haystack bars (bar form optional, but recommended, easy and low mess!)

Ingredients:
- 4 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3/4 cup powdered sweetener (I use Swerve, this ensures a smooth texture!)
- 1/4 cup premium unsweetened cocoa powder (I use Dutch processed)
- 1/8th tsp kosher or coarse sea salt
- 1 cup unsweetened shredded (or desiccated) coconut
- 1/3 cup chopped walnuts, pecans, or nut of choice
- 1 tsp sugar free vanilla extract
- *Optional: dried coconut, cacao nibs, or more nuts to top
- *Optional: top with melted chocolate for another layer of added decadence before topping with nuts
*If making into traditional haystacks or balls this quantity is perfect, if pressing into bars I recommend doubling!*
Method:
- Cream the butter, cheese, sweetener and cocoa powder together until smooth
- Add the vanilla extract, salt, coconut and chopped nuts/other mix-ins of choice and stir well.
- Spoon out into 1 inch balls or haystacks or press into a parchment lined 8×8 pan for bars
- Top with optional melted chocolate and/or chopped nuts or cacao nibs
- Refrigerate for 1 hour or until firm before cutting & enjoying (highly recommend straight from the fridge or freezer!)
