For the salad you need:
4 cups spinach
2 cup strawberries
1/2 cup goat cheese
1/4 cup sliced almonds
For the dressing you need:
1/2 cup mayo
1 tbsp olive oil
2 tbsp keto sweetener (I recommend powdered erythritol)
1 tbsp white vinegar
1 tbsp poppy seeds
1/4 tsp salt
Optional water for consistency of your choice
I recommend doubling the recipe to have some in the fridge, it stores perfectly and makes for an easy week night salad!
