Mashed Cauliflower

  • 1 medium cauliflower (approx. 1.5 lb)
  • 3 oz. butter
  • 1 tsp salt
  • 1/2 tsp pepper
  • garlic, optional
  1. Bring a large pot of water to the boil.
  2. Cut the cauliflower into evenly sized florets.
  3. Add the cauliflower to the boiling water and cook for 5-8 minutes, until cauliflower is tender.
  4. Drain the cauliflower really well and return it to the warm pot.
  5. Add the butter, salt and pepper.
  6. Blend the cauliflower with immersion blender until smooth.
  7. Rest for 3 minutes, then blend again. Stir in garlic or any other desired seasonings to taste.
  8. Serve and enjoy.
