You need:
- 1/4 cup butter
- 1/4 cup cream cheese
- 1/3 cup granulated monk fruit
- 1 large egg
- 2 tsp vanilla
- 1/4 tsp salt
- 3 cups almond flour
- Cinnamon “sugar” (2 tbsp granulated monk fruit + 2 tsp cinnamon)
To make:
- Preheat oven to 350 degrees
- Beat together softened butter, cream cheese, and monk fruit until fluffy
- Beat in egg, vanilla, and salt
- Slowly mix in almond flour
- Make cookies into 24 balls (should press together when rolled firmly with hands)
- Roll each cookie in cinnamon “sugar”
- Place cookies on a parchment lined baking sheet and gently flatten with palm
- Bake for 15 minutes
- Allow to cool before transferring
