Keto Baked Feta Pasta

You need:

  • 200 g cherry tomatoes
  • 100 g feta cheese 
  • 2 Tbsp olive oil
  • 1/2 tsp salt and pepper
  • 1 tbsp Italian seasoning
  • 3 cloves garlic
  • grated parmesan cheese (to serve)

To make:

  • Preheat your oven to 200C (400F).
  • Into a medium baking tray, place the tomatoes, and cover with 1/2 your olive oil. Mix until well combined.
  • Add the salt, pepper, and Italian seasoning. Mix until well coated.
  • Make a gap between the tomatoes, and place the feta cheese into the middle. Pour the remaining olive oil over the cheese along with the garlic, and place into the oven for 20 minutes – your tomatoes should burst.
  • Remove the dish from the oven, and using two forks press mixture together until it’s all well combined.
  • Serve with a sprinkle of parmesan cheese over keto noodles of choice (I like NuPasta).

You can add any kind of protein to this (chicken, beef or shrimp) to make this more filling and extra delicious!
