Keto Snickerdoodles

You need:

  • 1/4 cup butter
  • 1/4 cup cream cheese
  • 1/3 cup granulated monk fruit
  • 1 large egg
  • 2 tsp vanilla
  • 1/4 tsp salt
  • 3 cups almond flour
  • Cinnamon “sugar” (2 tbsp granulated monk fruit + 2 tsp cinnamon)

To make:

  • Preheat oven to 350 degrees
  • Beat together softened butter, cream cheese, and monk fruit until fluffy
  • Beat in egg, vanilla, and salt
  • Slowly mix in almond flour
  • Make cookies into 24 balls (should press together when rolled firmly with hands)
  • Roll each cookie in cinnamon “sugar”
  • Place cookies on a parchment lined baking sheet and gently flatten with palm
  • Bake for 15 minutes
  • Allow to cool before transferring
