- 1 medium cauliflower (approx. 1.5 lb)
- 3 oz. butter
- 1 tsp salt
- 1/2 tsp pepper
- garlic, optional
- Bring a large pot of water to the boil.
- Cut the cauliflower into evenly sized florets.
- Add the cauliflower to the boiling water and cook for 5-8 minutes, until cauliflower is tender.
- Drain the cauliflower really well and return it to the warm pot.
- Add the butter, salt and pepper.
- Blend the cauliflower with immersion blender until smooth.
- Rest for 3 minutes, then blend again. Stir in garlic or any other desired seasonings to taste.
- Serve and enjoy.
